In the entire book, there is not one STRAUB!  It appears Wagenseller has arbitrarily turned all STRAUBs into STROUBs, but STRAUB is the true/original surname while STROUB is either a phonetic mis-spelling of STRAUB or a mis-reading of the lowercase "a" in "Straub."

Mary Ann must have been in the habit of telling a whopping fib about her age; either that or the stone has been mis-read.  Parkey A. SHEMORRY is our subjects' grandson.  My bet is that the elder Adam and his wife, Christiana, are Jacob's parents.
