SCHAEFER may not be her maiden name, and her middle initial might not be the first letter of her middle name, but rather the first letter of her maiden name.

Otto was born a year before Jacob and Caroline were married.  In the 1880 census, his father is shown born in Illinois, which suggests he is not Jacob's child, though in later censuses his father is shown born in Switzerland.  He may be our subject's son from a prior marriage, though I find no such marriage record in Illinois.  He could be Caroline's child from a prior marriage, in which case, SCHAEFER is not her maiden name.  He could also be Caroline's illegitimate child, or he could simply be adopted and not related to either one of them.  Or maybe he is their child, and Jacob simply did his duty and married her, a year later.
