"Eben" is a nickname for Ebenezer, which is not a typical German given name, but Eben's mother was English, so the name probably came from her side of the family.  We do know that she had a brother named, Edwin.
Eben's parents were divorced, and their children appear to have scattered.  As often happens in such cases, the children have inaccurate memories with regard to their own origin and their parents origins, hence we see Eben with at least three different birthplaces in his records.  Based on his parents' census records, he was born in Illinois; it was his father who was from Jefferson Co., NY.
STROUP is the most common Anglicized spelling variation of the German surname, STRAUB, while   STROUB is much less common.

WI) is living in the Town of Liberty, Manitowoc Co., WI (p. 171) with her parents, Andrew Oleson (æ 27, b. NOR) & Gertrud (æ 27, b. NOR), plus an older brother.  Note that they have been enumerated using Andrew's patronym, Oleson, rather than his surname, JOLE.

Eben was born in Illinois.  It's likely that Lena, not Eben, was the informant here and in following enumerations, and she may have mistakenly believed Eben was born in New York as his parents, indeed, were.

He's indexed "Eben Stroupe"; she's indexed "Sena Stroupe."  There are cards for the children (surnamed Stroupe):  Harry, Clarence, Mary, Chester, Lloyd, and Floyd, but I didn't download them as they don't tell us anything we don't already know.
The bombshell here is that we find out Eben believes he was born in Jefferson, NY, and that tells us which William STROUP in the 1850 census is his father.

Eben was born in Illinois, and his parents were born in New York, but this record gives us important clues to their origins.  We already know STRAUB/STROUB/STROUP has a German origin, and this record suggests his mother was Scottish, which could explain our subject being named, "Ebenezer."

He's indexed twice, both times as "Ebin Shoup."  A note on the image says the document was repeated intentionally.  I don't see any difference in the two images. Indexed "Lena Shoup."  There are cards for all the children, all indexed "Shoup."  I didn't check to see if there was anything of interest on them.

The most important item to note on these records is that Eben STROUP, husband of Lena JOEL (sic), finally gives his birthplace correctly as Illinois, erasing any doubt we might have had that our subject was the son of William STROUP.

There are also cards for Clarence, Chester L., Floyd, and Lloyd, but I can't find one for Lena or the others.  There's no way to browse the cards, so unless you can match how they're indexed, you can't find someone.
