Is this really the same Joseph?  Hmmm.  I think it must be; he lived all his adult life in Chillisquaque, and there is no other Joseph.  So, granted the census-taker made a slight mistake in Joseph's age, let's say Elizabeth has died and he has not yet married Maria.  Elizabeth's children survived, so they must be staying with kin.  Still…
